I’m betting the ADA in the question is Dietetic, not dental. ADA is a big promoter of healthy eating, and one of their principles is food safety. I presume their interest in kitchen design would look at being able to easily sanitize a prep station (especially where poultry is prepared) and convenient refrigeration plus safe food holding equipment.
I am taking this class as well, at Westwood, no doubt, and I am wondering why you don’t just do the research so that you can learn, instead of ending up with answers like the one previous to this one. You could look on the ADA website and the like. This one is not a valid one for research. Do yourself a favor and stop cheating yourself out of an education. People like me who do the research will be competing for jobs with people like you who cut corners. Who do you think will get the project?
